Step 1
Press both sides of the beef into the sesame seeds to coat. Heat 3 teaspoons of oil in a wok or large deep frying pan over medium heat. Cook half the beef for 1 minute each side or until golden. Transfer to a plate and cover with foil. Repeat with another 3 teaspoons of oil and remaining beef. Wipe the wok clean.
Step 2
Place the noodles in a large heatproof bowl. Cover with boiling water. Set aside for 2 minutes to soak. Drain.

Meanwhile, combine the soy sauce, sherry, oyster sauce and brown sugar in a small bowl.
Step 4
Heat the remaining oil in the wok over medium-high heat. Stir-fry the garlic, ginger, chilli, combined capsicum, mushroom and broccolini stems for 2 minutes. Add the soy sauce mixture, sugar snap pea and remaining broccolini. Bring to the boil and cook for 2 minutes or until the sauce thickens slightly.
Step 5
Add the noodles and beef to the vegetable mixture. Toss to combine.
