Step 1
Rinse and trim ends off Brussels sprouts. Using a mandoline, a sharp knife, or food processor with a slicing blade, thinly slice Brussels sprouts and transfer to a large mixing bowl. Use caution when slicing, especially if using a mandoline.
Step 2
In a small mixing bowl, whisk together olive oil, lemon juice, maple syrup, garlic, salt, mustard, and pepper until emulsified into a dressing.
Step 3
Pour dressing over Brussels sprouts and toss thoroughly to combine. Taste and adjust dressing by adding more olive oil, lemon juice, and salt as needed. If the sprouts taste a little bitter, you can massage the dressing into them for a minute or two.
Step 4
Fold in flaked salmon. Serve immediately or store in refrigerator for up to a day.
