This shaved Brussels sprouts salad is a fresh and flavorful recipe that comes together in 10 minutes! Just toss together shaved sprouts, a few other seasonal ingredients, and drizzle with a vinaigrette.

Shaved Brussels Sprouts Salad

Brussels sprouts (shaved

apple

almonds

cranberries

red onion (diced)

goat cheese

olive oil

lemons (juiced (approx 1/3 cup juice))

Dijon mustard

honey (or maple syrup)

garlic

salt and pepper (to taste)

Make the dressing by combining all the of dressing ingredients in a small mixing bowl. Use a whisk to vigorously blend and emulsify the dressing.

Add all of the salad ingredients to a large mixing bowl.

Drizzle the dressing on top and toss the salad to combine.

This was great! My whole family loved it, only adjustments I made for personal preference was to add a little more honey to the vinaigrette and used feta instead of goat cheese. Just knew my boys would prefer it that way! But this was so fast to make and one of the only things, aside from roasting a chicken, that I made the day of!

I was looking for a salad recipe and found this. Made it tonight and I can’t believe how fabulous it tastes and so simple to put together. The Lemon Vinaigrette is the perfect dressing for this salad. I took your recommendation and tossed everything together and put it back in the fridge and it totally amped up all the flavors! I actually ate it with your Falafel Flatbread (which I made for the first time and loved!) Thank you again!

Great recipe, most importantly the dressing. I bought a premade mixed bag of shredded kale, red cabbage, Brussels sprouts, broccoli slaw (from Trader Joes). And I used a blender to purée the dressing instead of whisking. I used honey crisp apples, and it was easy and eye catching.
