Step 1
Preheat the oven to 450 degrees F.
Step 2
Line a large baking sheet or cookie sheet with foil or parchment paper. Spray the baking sheet with non-stick cooking spray {alternatively you can just spray the non-stick spray on the baking sheet}.
Step 3
Cut the potatoes into quarters and set aside.
Step 4
In a large mixing bowl add the vegetables, 1/2 of the seasoning packet and 3 tablespoons olive oil. Toss to coat evenly.
Step 5
Place the vegetbales on the baking sheet in a single layer. Leave room to add the chicken.
Step 6
Add the chicken tenderloins to the mixing bowl. Add 1 tablespoon olive oil and remaining 1/2 of the seasoning packet to the bowl. Toss to coat evenly on the chicken.
Step 7
Place the chicken on the pan between the vegetables and potatoes {the chicken should not overlap the vegetables or potatoes}.
Step 8
Turn oven to 425 degrees F.
Step 9
Bake your sheet pan meal on the bottom rack for 25-30 minutes or until the chicken reaches 170 degrees F. You want to make sure and check the sheet pan meal towards the end of cooking because depending on your oven and the cut of chicken it could take less time than the 25-30 minutes.
Step 10
Garnish with fresh parsley and enjoy!
