Step 1

Preheat oven to 400 degrees.

Step 2

Line large baking sheet with parchment or foil.

Step 3

Combine all marinade ingredients in small dish. Reserve 2 tablespoons of marinade to brush on fish.

Step 4

Toss chopped veggies in remaining marinade.

Step 5

Spread onto prepared baking sheet.

Step 6

Bake for 10 minutes.

Step 7

Brush fish fillets with reserved marinade and nestle on to par cooked veggies.

Step 8

Bake for additional 15 minutes or until fish is firm to the touch and internal temp is 145 degrees.

Step 9

Serve with corn or flour tortillas and all your favoriate fajita condiments!
