Grease a 6 ounce ramekin with butter and place it on a rimmed baking sheet.Crack the eggs into the ramekin

Pour the heavy cream around the yolks

Season with salt and pepper, then sprinkle on the Parmesan.Bake until the egg whites are just set and yolks are still runny, 11-12 minutes

The eggs will continue to cook after they come out of the oven, let them rest for 3-4 minutes

Garnish with chives, if desired
Step 7
Serve warm with crusty bread alongside.
