Place the chicken breasts in a medium sized pot.Add enough cold water until the chicken breasts are fully submerged, season the water with salt.Bring the water to a simmer over medium heat

Turn the heat to low, cover the pot and simmer until the chicken has reached an internal temp of 165°F on an instant-read thermometer, about ten minutes.Remove the pot from the heat

Step 3

Let the chicken rest in the poaching liquid for 3-5 minutes.
