Step 1
Heat oil and half the butter in a hot pan and cook mince until well browned.
Step 2
Transfer mince to a bowl and set aside.
Step 3
Add remaining butter to a pan and cook onion and garlic on medium heat until golden.
Step 4
Return meat to the pan and stir in carrot, tomato sauce, stock and mustard.
Step 5
Reduce heat and simmer the sauce for 5-10 minutes or until the liquid has thickened.
Step 6
Stir in parsley and season with salt and pepper, if required.
