Step 1
Stir together flour, baking powder, cinnamon, baking soda and salt; set aside.

In large mixing bowl, stir together cereal and boiling water; let stand 2 minutes or until water is absorbed.

Mix sugar into softened cereal until well combined.

Stir in milk and oil.
Step 5
Add egg and raisins; beat well.
Step 6
Add flour mixture, stirring just until combined.
Step 7
Portion batter evenly into lightly-greased large muffin-pan cups.
Step 8
Bake at 200°C (400°F) about 20 minutes or until tops of muffins are light golden brown and spring back when lightly touched.
Step 9
Let muffins cool 5-7 minutes, then turn out onto wire rack to cool completely.
