Sprinkle salt and pepper on the steak. Heat oil in a large cast-iron or non-stick pan over medium-high heat. Cook steak for 5 to 6 minutes per side or until desired doneness.
Step 2
Use a meat thermometer for added precision; Medium-Rare: 120 to 125°F. Medium: 130 to 135°F. Medium-Well: 140 to 145°F. Well-Done: 150 to 155°F.
Step 3
Remove from pan; let stand 5 to 10 minutes before slicing across the grain.
