Step 1
To make the toum, place the garlic and salt in the bowl of a food processor and process until the garlic is finely chopped. Gradually add the oil and lemon juice, and process until smooth.
Step 2
Thread the chicken onto the soaked skewers and place in a large flat-based glass or ceramic dish.
Step 3
Spoon a third of the toum over chicken skewers and turn skewers to coat. Cover with plastic wrap and place in the fridge for at least 1 hour to marinate. Cover remaining toum and place in the fridge until serving.
Step 4
Heat a chargrill or frying pan over high heat. Brush with a little oil to grease. Add half the chicken skewers and cook for 5 minutes each side or until cooked through. Transfer to a plate and cover with foil. Repeat with remaining chicken skewers. Serve with remaining toum and lemon wedges.
