Step 1
Heat the oil in a skillet (that has a lid), over medium high heat. Gently add the sliced smoked sausage into the skillet and cook for 5 minutes. Turn constantly so that the meat just turns brown instead of burning.
Step 2
Next add the potatoes, bell pepper, and onions to the skillet. Sprinkle all of the seasonings over the potatoes: the seasoned salt, garlic powder, onion powder, and black pepper.
Step 3
Stir the potatoes up until all of the ingredients are combined, and the seasonings are evenly coating the mixture.
Step 4
Place the lid on the skillet and allow the potatoes to simmer for 7 minutes. Open the lid and use a spatula to sort of lift and turn the potato mixture over. Careful not to break the potatoes up too much, as they will be tender.
Step 5
Leave the lid off and allow the potatoes to fry for another 7 minutes. Keep an eye on them to see if they should be turned again so they do not burn.
Step 6
Remove from the heat and enjoy!
