Pesto is so delicious and easy to make; it just takes seconds to make in a blender or food processor. The only downside is that a traditional pesto uses lots of olive oil, which is delicious and a healthy fat, but high in calories if you are trying to eat lighter.  My skinny pesto sauce is lightened up by a secret ingredient which stretches the oil without compromising flavor or texture. 

Skinny Pesto Sauce

basil (fresh, packed)

garlic

Pecorino Romano (grated)

olive oil

lemon juice

tsp kosher salt

Wash and dry the fresh basil.

Grate the cheese.

Add all ingredients to the blender or food processor and pulse until blended thoroughly, so that all of the basil leaves are broken down.

I also added a table spoon of pine nuts. Best pesto recipe I’ve tried! So fresh and didn’t feel heavy on our stomachs after. Will make again!

So refreshing and flavorful! I’m so excited  to eat pesto since I usually shy away from it due to high calories. Just the right amount of lemon juice. The only problem I had was using my Vitamix everything kind of just stuck to the bottom under the blade and wouldn’t really process well.  I don’t have a regular food processor but I had a mini one so I transferred everything in there and it turned out great.

Absolutely perfect recipe! I’ve made it at least 10 times this summer!

Delish. Froze in an ice tray and it’s perfect for pulling out of the freezer as needed.

This pesto was so easy to throw together and the flavor is incredible! I absolutely recommend trying this recipe! I had it on pasta with cooked chicken and fresh tomatoes. 10/10

Sooo good!!!  Picked a whole bunch of basil from my garden and made this pesto. Portioned it out into ziploc bags and put it in the freezer.  Now it’s ready whenever I need it. Love this lightened up version! Another hit Stephanie!
