Step 1
Preheat oven to 180°C or 350°F fan forced and line two baking trays with baking paper.
Step 2
Place macadamia nuts in mixer bowl, chop 2 sec/speed 5/MC on. Set aside.
Step 3
Add butter, coconut sugar, egg and vanilla to mixer bowl and blend for 2 min/speed 3/MC on.
Step 4
Add flour, bicarb soda, baking powder and salt and blend for 30 sec/speed 4/MC on.
Step 5
Add mini choc chips and reserved chopped macadamia nuts and combine for 30 sec/speed 2/reverse/MC on.
Step 6
Spoon walnut sized balls onto baking paper, ensuring to leave around 4 cm or 1.6" between each ball, and bake for 10 mins or until golden brown on top.
Step 7
Cool for 5 mins before serving.
