Step 1

Set aside 1/2 cup (100g) lentils.

Step 2

To make hummus, place remaining lentils in a food processor with butter beans and borlotti beans, tahini, garlic, parsley, cumin, lemon juice and 5 ice cubes. Whiz until smooth. Transfer to a serving bowl and set aside.

Step 3

Heat oil in a large frypan over high heat. Add onion and baharat. Cook, stirring, for 1 minute or until softened slightly, then add steak, sugar, reserved lentils and lemon zest. Cook, stirring occasionally, for 6-8 minutes or until browned.

Step 4

Transfer to a bowl and top with green beans, feta and herbs. Serve with hummus and flatbreads.
