Step 1
In a food processor, blend the onion, garlic, ginger and 3 tbsp of water until a paste has formed.
Step 2
Spray a large frying pan with Fry Light for Slimming World or oil if making a keto curry, then brown off the beef.
Step 3
Add the onion paste to the beef and continue frying for another 5 minutes.
Step 4
Now add all of the spices and fry for another 2 minutes and transfer to your Slow Cooker.
Step 5
Finally, add the tomatoes and tomato puree, then stir well.
Step 6
Pop the lid on and cook on Low for 6-7 hours or High for 4 hours until the curried beef is tender.
Step 7
Stir in some fresh coriander leaves and perhaps serve with either syn free rice on Slimming World or cauliflower rice or salad if making as a keto curry, to consume less carbs.
