Step 1
Prepare the Pork Belly: Score the skin of the pork belly in a criss-cross pattern.Season with salt and pepper.

Marinate: In a bowl, mix soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, garlic, and ginger.Rub the mixture all over the pork belly. Let it marinate for at least 1 hour, or overnight for best results.
Step 3
Slow Cook: Place the sliced onion at the bottom of a slow cooker.Put the marinated pork belly on top of the onions.Pour the chicken broth around the pork belly.
Step 4
Cook: Cover and cook on low for 6-8 hours, until the pork belly is tender and the fat has rendered.
Step 5
Finish: Optional: For a crispy finish, preheat the oven to 425°F (220°C). Transfer the pork belly to a baking sheet and roast for 20-30 minutes until the skin is crispy.
