Step 1
In a 5-quart or larger slow cooker, place chicken; top with bell pepper and pineapple.
Step 2
In a small bowl, combine teriyaki sauce, pineapple juice, soy sauce, ginger, and garlic; mix well. Pour mixture over chicken.
Step 3
Cover and cook on HIGH 3 hours or until chicken is fork-tender. Shred chicken with 2 forks. Sprinkle with scallions and cook uncovered 30 minutes more or until sauce has thickened.
