Step 1
Lightly spray the slow cooker with non-stick cooking spray.
Step 2
Place the chicken in a single layer and sprinkle evenly with taco seasoning.
Step 3
In a medium bowl, mix together the Rotel or salsa, green chiles, and chicken broth (if using).
Step 4
Pour the mixture evenly over the chicken.
Step 5
Cook on low for 6 to 8 hours, or on high for 3 to 5 hours.
Step 6
When ready, drain the excess liquids leaving just a little behind, then shred the chicken using two forks. Drain well.
Step 7
Spoon the queso on top of the chicken and gently mix to coat the chicken evenly. Cover and cook on low for 20 minutes or until heated through.
Step 8
Serve with your favorite taco toppings and enjoy!
