Step 1
Make the curry paste by placing all ingredients in a food processor and processing into a paste. Add water, if required.
Step 2
Lightly toast coconut over low heat until lightly golden. Allow to cool. Process in a food processor to make a fine powder.
Step 3
Heat large frying pan. Add curry paste, coriander, turmeric and lime leaves. Cook until fragrant. Add beef and brown.
Step 4
Place beef, fish sauce, coconut milk powder and desiccated coconut into slow cooker and stir to combine.
Step 5
Cook for 4-5 hours on high. Add water if required.
