Step 1
Remove the skin from the onion and roughly chop.
Step 2
Pour the beer into a foil pan and add the onions.
Step 3
Set your pellet grill to 225F using hickory pellets
Step 4
Place the beer and onion bath in he hottest part of your smoker. In a Pit Boss this will be directly over the flame broiler.
Step 5
Let the beer bath heat through for 15 minutes.
Step 6
Place the brats on the smoker and cook for 30 minutes until an internal temperature of 140F is reached.
Step 7
Transfer the brats to the beer and onion bath and let simmer for 15 more minutes or until an internal temperature of 165F is reached.
Step 8
Remove the brats from the smoker and serve with mustard and pickles.
