Get your grill to 300º.
Step 2
Slice your pork belly into cubes.
Step 3
Coat with mustard, season with Heath Riles BBQ Garlic Jalapeño and Competition BBQ Rubs, and toss.

Place pork belly cubes fat side up on a greased wire cooking rack.
Step 5
Place pork belly on your grill. Put a disposable pan underneath to catch all drippings.
Step 6
Smoke your pork belly for an hour and a half.
Step 7
Take off grill and place pork belly in an aluminum pan.
Step 8
Toss pork belly in brown sugar, Heath Riles BBQ Sweet BBQ Sauce, and Checkered Pig Competition Sauce. Place butter on top and dust on Heath Riles BBQ Competition BBQ Sauce.
Step 9
Place foil on your pan and place back on grill for another hour and a half to 2 hours, or until probe tender.
Step 10
Take off grill, let cool, and enjoy.
