Step 1

Make the gremolata by very, very finely chopping the parsley and then mixing with the olive oil and lemon zest. Set aside to infuse.

Step 2

Chop the smoked salmon into small pieces and finely chop the dill. Place in a bowl with the dijon mustard and sesame seeds and season well. Mix together.

Step 3

Dice the avocado into small cubes and tip over the lemon juice.  Place the food presentation ring on a plate and spoon in the avocado. Gently press down.

Step 4

Place the smoked salmon on top of the avocado. At this point, you can place them in the fridge for a couple of hours until you are ready to serve them.

Step 5

When serving mix the rocket with a small splash of olive oil and some cracked black pepper. Carefully remove the food ring and gently create a ball of rocket/arugula in your hands. Arrange the rocket on top of the stack. Drizzle the gremolata around the plate.
