Step 1

Lay a nori sheet out on a flat surface.

Step 2

Top with smoked salmon.

Step 3

Top with thin slices of avocado, sauerkraut and micro greens or sprouts.

Step 4

Carefully roll the seaweed up.

Step 5

To seal the nori sheet rub a little bit of water on the edge.

Step 6

With a sharp knife, cut it into bite size pieces and place on a plate.

Step 7

Slice the lemon into very thin slices and place it on top of each bite sized roll.
