Step 1

Make Basil and Chive Dressing: Combine all ingredients in a serving bowl. Season.

Step 2

Place cream cheese, lemon rind, cornichons, capers and chives in a bowl. Season with pepper. Stir to combine.

Step 3

Place 1 piece of salmon on a flat surface. Leaving a 1cm border at one short end, spread salmon with 2 teaspoons cream cheese mixture. Top with 2 pieces of cucumber. Starting at end opposite to border, roll up to enclose filling. Cut in half crossways. Place on a serving plate. Repeat with remaining salmon, cream cheese mixture and cucumber. Serve with dressing.
