Step 1

Poach two eggs in boiling water for 3-4 minutes. Toast bagels.

Step 2

Peel and smash avocado and apply to bagel with a squeeze of lemon juice.

Step 3

Lay smoked salmon slices over the smashed avocado and place a poached egg on top. Season with pepper to serve.
