Step 1

Preheat oven to broil setting.

In a medium-size bowl, whisk together eggs, mayonnaise, and parsley.

Stir in feta cheese and season with salt and pepper; set aside.

Add I Can't Believe It's Not Butter to pan and melt over medium heat.

Step 5

Add rounds of sausage and cook for 1 minute; flip and continue to cook for a minute longer.

Step 6

Stir in minced garlic, and cook for 30 seconds, or until fragrant.

Step 7

Pour in the egg mixture and cook for 5 minutes.

Step 8

Place pan into oven and broil for 4 minutes, or until browned and fluffy.

Step 9

Serve.
