Step 1
Cut the top of the bell pepper, remove the seeds or stems and set them aside.
Step 2
Set a large pan over medium heat and cook ground beef and ground sausage. Set the meat aside once you cook it.
Step 3
Now, add olive oil to the skillet. Add onions, diced pepper tops, and garlic to the skillet. Cook for at least 5-8 minutes.
Step 4
In a bowl, combine the meat, cooked vegetables. Add shredded cheese and mix well.
Step 5
Fill each bell pepper with this mixture and place them in the pre-heated (300 F) smoker. Smoke these bell peppers for about 50 minutes.
Step 6
Add shredded cheese on top of the bell peppers and smoke for 10 more minutes until the cheese melts.
Step 7
You can garnish your bell pepper with chopped parsley or cilantro.
