Step 1
Place sour cream, mustard, lemon rind and chives in a small bowl, and mix until combined. Set aside.

Blanch snow peas by dropping them in a saucepan of boiling water for 1-2 minutes, then drain and refresh in cold water.
Step 3
Drain snow peas. Arrange on serving plates with the watercress, smoked trout, Spanish onion, salt and pepper. Serve with sour cream mixture on the side and grissini sticks.
