Step 1
For the syrup, combine the cardamom pods, water, and sugar in a small saucepan. Simmer until the sugar has dissolved. Let syrup cool in a saucepan, then transfer to an airtight container. (Syrup can be stored in the fridge for a few months.)
Step 2
For the cocktail, place 2 cardamom pods on a heat proof surface. With a match or lighter, light the cardamom pods on fire and place an 8 ounce glass overtop. Leave covered for 2 to 3 minutes until the glass appears to be full of smoke.
Step 3
Flip your glass and then fill it with ice. Add in cardamom syrup, lime juice, vanilla extract, and gin. Give it a stir then top it with seltzer water. Garnish with the charred cardamom pods and the lime peel.
