Step 1
Boil a pot of water, and blanch the snow peas for 1-2 minutes. Transfer them to an ice bath immediately to cool and retain their bright color.
Step 2
Slice the cucumber, julienne the bell peppers, and shred the carrot. Combine these vegetables with the blanched snow peas in a large mixing bowl.
Step 3
In a small bowl, whisk together olive oil, lemon juice, soy sauce, and sesame oil. Season with salt and pepper to taste.
Step 4
Pour the dressing over the vegetables and toss gently to coat everything evenly.
Step 5
Sprinkle toasted sesame seeds, fresh herbs, and sliced green onions on top. Serve immediately and enjoy!
