Step 1
To make dashi, combine a pieceof dried kelp (kombu) and 4cups of water in a medium saucepan overmedium heat.
Step 2
Don’t let the mixtureboil; as soon as it’s about to, turn off theheat, and remove the kelp.
Step 3
Add ½ cup dried bonito flakes, and stir; let sit fora few minutes, then strain, addsome soy sauce to taste and refrigeratefor up to 2 days.
Step 4
Cook some sobanoodles, and rinse under cold water tocool them down; toss with alittle neutral or sesame oil to preventthem from sticking.
Step 5
To serve,pour some of the cold dashi into bowlsand top with the noodles.Garnish: Chopped scallions.
