Preheat oven to 375 F and grease a muffin tin, set aside.

In a medium bowl sift together your dry ingredients (flour, baking powder and soda, salt, and sugar). In stand mixer (or using hand mixer) mix together wet ingredients until fully combined. It may look a little lumpy and that’s okay! Add dry mixture to your wet mixture along with cheese and stir until just combined. Using a cookie scoop add the batter to your muffin tin, make sure you fill them evenly. Gently push the batter down with the back of the scoop.
Step 5
Bake for 15-17 minutes until toothpick comes out clean. Allow to cool 5 minutes and then enjoy!
