Soft Oatmeal Bread

water (70°

canola oil

lemon juice

sugar

salt

all-purpose flour

oats

active dry yeast

Excellent bread!  Set bread machine for 1-1/2 lb loaf, light crust. Dough looked a bit too wet, added heaping tablespoon of flour.  When done, pulled out of machine and coated with butter all over to keep crust soft.  Very good, crust stayed soft.

I know, I know.  It says to make it in your bread machine.  But I made it in my mixing bowl.  And let me tell you that this recipe is good in that arena, too.

This Taste of Home Volunteer Field Editor was so happy to find this easy recipe!  The only different things I did were the following:
*used vegetable oil instead of canola because that is what I had
*dissolved the yeast in about 1 cup of water and then added the other two
*used 1/2 cup less flour because in my experience, after you roll something out on a floured surface and incorporate that flour into the dough, it can make the dough and finished product dry

I baked at 350 degrees for about 40 minutes in my Ninja Air Fryer/toaster oven.  Made a double batch of the dough to make another TOH recipe with it and to make a couple of loaves for the hubs and I.  I just had a slice and it's wonderful.

Easy, cheap, excellent product?  What more could I ask for?  Except some cold butter to go on my warm slice of bread.  

I think you could swop out a cup of the flour for a flax flour or oat flour to give it more fiber and even mix some seeds in.  Maybe one tablespoon of something.  I'll try that next time around.

I followed he recipe exactly. The only problem I had, was as soon as the bread machine started to bake, the bread completely sunk in the middle. It had risen beautifully and just sunk. I looked up reasons this might happen and found it could be too much liquid in the recipe? Anyone else have this experience? Next time I will bake it in the oven. The bottom half did come out nicely with a good cust and tastes really good. Will try just the dough cycle next time and bake in the oven.

This is delicious!  I needed to add about 1/3 cup extra flour for high altitude, but it tasted great!

This was the most moist bread I've ever made in a bread machine. I did not have white sugar so substituted brown sugar and it still came  out well.

As good as this bread is, the TOH Maple Oatmeal Bread recipe is even better!  If you like this, you ought to give that one a try.

This bread is amazing!  It's light and tasty, will definitely make again as it was enjoyed by all!

anyone have this recipe for 1 lb loaf? should I just cut in half?

This bread is so soft and delicious. As the dough was mixing, it looked a lot moister than my normal bread machine recipes. I think the oatmeal soaks up some of the moisture, so I didn't add a lot of extra flour while mixing.

We use our bread machine to make all our bread. We've tried  a lot of different recipes, but this is by far our favorite bread to make.

I followed the recipe exactly. Let the bread cook in my bread machine, and it came out delicious, light with a slight sweetness to it. Delicious sliced with butter melted on it, and perfect for peanut butter and jelly, or chicken salad sandwiches.

Like others, I noticed the dough was much wetter early in the process, but it turned out great! After the second rise when the paddle turned on again, the dough sunk in the middle and clung to the sides of the pan; I scraped down the sides and let it continue and all turned out well. The bread is soft and moist, and the oatmeal flavor is subtle. Will make this again!

This is by far one of the very most delicious breads I have made with my bread machine.  Perfect!  This one is a keeper and I will be making this often!  The whole family loved it.  The only problem was it was gone in no time! :)

I've been looking for a recipe that suits my family of five and this one's a hit!  It's moist and flavorful without overpowering the younger tastebuds.
