Step 1
In a large bowl, whisk flour, sugar and salt.
Step 2
Add in butter, rub the butter into the flour mixture until it resembles bread crumbs.
Step 3
Add water by spoon, mix gently until the crust comes together. do not add too much water.
Step 4
Shape the dough into a disk, wrap with plastic wrap and chill in the fridge for 1 hour. Place the crust on the counter in room temperature right before you turn the oven on.
Step 5
Meanwhile, mix sour cherries, cornstarch and sugar, set aside until it releases juice. Discard the juice.
Step 6
Place the crust on the counter in room temperature. Preheat the oven to 350F. Line a baking sheet with parchment paper.
Step 7
Roll out the crust, place the sour cherries in the middle of the crust, leaving 2 inches from the edges.
Step 8
Gently start folding the edges inside to cover some sour cherries.
Step 9
Mix the egg and sugar in small bowl, brush over the edges of the galette.
Step 10
Bake in the oven for 30 - 40 minutes until the crust is golden brown and the sour cherries are bubbling.
Step 11
Take the galette out of the oven let it cool in cool in room temperature for 20 minutes before cutting.
