Step 1

Preheat oven to 400°F.

Step 2

In a skillet or saucepan, melt the shredded mozzarella over medium heat. Remove from heat, then add the sour cream. Pour into a separate bowl and stir until well combined.

Add the almond flour, coconut flour, egg, and chives to the cheese mixture. Mix until well combined.

Step 4

Wrap the dough in plastic wrap, then place in the fridge for 10­ to 15 minutes.

Step 5

Between two pieces of parchment paper, roll the dough very thin using a rolling pin. Remove the top piece of parchment paper.

Step 6

Use a cookie cutter or a knife to cut out shapes. Place the shapes onto a parchment paper lined baking sheet. Brush the tops with the melted butter, then sprinkle with salt.

Step 7

Bake for 8 to 10 minutes, keeping a close eye on them. (Place any dough scraps back in the fridge for another for 10 to­ 15 minutes before rolling out again.)
