Preheat oven to 180C/160C fan forced. Grease a 1.5-litre (6-cup) baking dish.
Step 2
Boil potato in a large saucepan of boiling water for 8-10 minutes or until almost tender. Drain. Cool for 5 minutes.

Meanwhile, heat oil in a large frying pan over medium-high heat. Cook bacon and onion, stirring occasionally, for 5 minutes or until onion and bacon are lightly browned. Add garlic and cook, stirring, for 1 minute or until fragrant. Transfer to a large bowl.
Step 4
Add potato, sour cream, cream and 1 cup cheese to bacon mixture and toss to combine. Season with salt and pepper. Place in prepared dish and sprinkle with remaining cheese. Bake for 20 minutes or until potato is tender and cheese is golden. Sprinkle with parsley and serve.
