firstly, to prepare the masala paste, in a mixer jar take ¾ cup coconut, 2 tbsp cashew and 2 tbsp vegetable masala.

grind to smooth paste adding ½ cup water. keep aside.

in a large kadai heat 2 tbsp oil, add 1 tsp cumin, 1 tsp mustard and few curry leaves. splutter the tempering.

now add 1 onion, 1 tsp ginger garlic paste and saute until golden brown.

further, add 2 tomato and saute until they turn soft and mushy.
Step 6
add 1 potato, 1 carrot, ½ capsicum, 5 beans, 2 tbsp peas and 2 tbsp sweet corn.
Step 7
also, add ½ tsp salt and saute for 2 minutes or until the vegetables are well combined.
Step 8
add in the prepared masala paste and cook for 2 minutes or until the raw flavour is gone.
Step 9
further, add 2 cup water and mix well adjusting the consistency.
Step 10
cover and boil for 10 minutes or until the vegetables are cooked well.
Step 11
add 2 tbsp coriander and mix adjusting the consistency.
Step 12
finally, enjoy mix veg curry with roti or rice.
