Step 1
Preheat a 5- to 6-quart Dutch oven or large pot over medium heat. Add oil and ham hocks, bacon, or diced ham and cook until browned, turning meat occasionally, 8-10 minutes.
Step 2
Toss in cabbage, onion, all-purpose seasoning, red pepper flakes, and sugar, stirring to combine thoroughly. Add broth and reduce heat to medium-low.
Step 3
Cover pot and cook, stirring occasionally, until cabbage is tender and lightly browned, around 1 hour. Cut off the skin from the ham hock and discard it and the bone. Cut the meat into chunks and return to the cabbage. Taste and add more all-purpose seasoning if you like.
