Southern Pimiento Cheese Recipe

cheddar cheese

red peppers

mustard

dill pickle juice

Worcestershire sauce

mayonnaise,

pepper

Combine all ingredients in a medium bowl; stir to combine. Refrigerate for at least 1 hour. Stir again and add more mayonnaise if needed, as cheese will absorb mayonnaise during refrigeration. Add salt, pepper or cayenne if desired.


Wow! This is an excellent recipe.  Made it tonight for my husband.  We are both from the South, and loved the ingredients.  I used Cracker Barrel cheese and grated it fresh with the large-hole grater.  This really is The Best pimento cheese recipe we both have ever eaten.  I would not change a thing.  Tasted great with fresh celery or Pita Chips.   Used a couple of scoops on my vegetables for dinner as well.   This is the first food review I have ever written, but had to write it because this recipe is so good :)
