Step 1

Melt the bacon drippings in a stainless or cast iron skillet on slightly over a medium heat.

Step 2

Combine the cream and half and half or milk; whisk in the cornstarch.

Step 3

Add the corn and sugar, if using; stir together.

Step 4

Pour into the hot bacon drippings and cook for about 15 minutes, or until reduced and thickened, stirring frequently and mashing the corn.

Step 5

Stir in 2 to 3 tablespoons of butter to finish. Taste and add salt and pepper as needed.
