Step 1

Combine pork, wine, lemon juice, oil, garlic, oregano and paprika in a glass or ceramic bowl. Cover with plastic wrap and place in the fridge for 1 hour to marinate.

Step 2

Meanwhile, to make the tzatziki, use your hands to squeeze as much liquid from the cucumber as possible. Place in a medium bowl. Add the yoghurt, mint and garlic and stir to combine. Taste and season with salt and pepper.

Step 3

Drain the pork from the marinade. Thread the pork, capsicum and onion evenly among the skewers.

Step 4

Heat a barbecue or char-grill on high. Add the pork skewers and cook, turning occasionally, for 5-7 minutes or until just cooked through. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.

Step 5

Wrap the pita in foil and place on the grill for 2-3 minutes to heat through. Place the pita on serving plates. Top with the pork skewers and tzatziki. Serve immediately.
