Step 1

Lightly spray a frying pan with cooking oil spray and heat on medium. Cook onion and garlic for 5 minutes, stirring, until soft. Add carrot and celery and cook for another 5 minutes.

Step 2

Increase heat to high, add mince and cook for 5 minutes, stirring to break up any lumps, until browned. Add tomato, parsley, oregano and 1/2 cup water. Simmer, stirring occasionally, for 25 minutes.

Step 3

Meanwhile, cook spaghetti in a large saucepan of boiling, salted water according to packet directions. Drain. Top spaghetti with bolognese sauce, sprinkle with parmesan and serve.
