Spaghetti & Zucchini Frittata

Step 1

Pre-heat in broiler - high heat

Step 2

Add water and salt to a clean large saucepan

Step 3

Boil

Step 4

Add spaghetti to the pasta

Step 5

Cook until al dente

Step 6

Drain

Step 7

Add olive oil to a clean frying pan

Step 8

Heat - low heat

Step 9

Add onion to the frying pan

Step 10

Cook in frying pan until softened - approx 8 min, low heat

Step 11

Add zucchini and garlic clove to the frying pan

Step 12

Cook in frying pan while stirring occasionally - 2 min, low heat

Step 13

Add egg, salt & pepper, parmesan cheese and fresh basil leaves to a clean medium bowl

Step 14

Beat until well combined

Step 15

Transfer pasta to egg mixture

Step 16

Transfer content of frying pan to egg mixture and mix

Step 17

Return egg mixture to frying pan evenly

Step 18

Cook until set - 10 min, low heat

Step 19

Broil in broiler until set

Step 20

Shake in frying pan

Step 21

Transfer content of frying pan to plate

Step 22

Sprinkle with parmesan cheese

Step 23

Garnish with fresh basil leaves

Let cool - approx 5 min

Step 25

Serve
