Step 1

Preheat the oven to 300 F. Add the almond flour and all-purpose flour to a large baking sheet and mix together. Toast the flour mixture in the preheated oven for 20 minutes. Let the flour cool completely.

Step 2

Increase the oven temperature to 350 F. Line two baking sheets with parchment paper, set aside.

Step 3

Sift the flour mixture into a large bowl. Set aside.

Step 4

In a separate large bowl cream together the sugar and butter until combined and fluffy. Add in the salt, lemon zest, and lemon juice and mix until well combined.

Step 5

Add the sifted flour mixture to the butter mixture. Mix until just combined.

Step 6

Place the dough onto a lightly floured surface. Use a floured rolling pin to roll out the dough until it is about ½-inch thick. Use a 1 ½-inch cookie cutter or round glass to cut out circles in the dough. Use a spatula to move the cut-out circles to the prepared baking sheets. Roll out the scraps of dough and continue cutting out circles until all the dough is cut. Bake the cookies in the preheated oven for 10-15 minutes, until the edges are golden brown.

Step 7

Let the cookies cool completely on the baking sheets, then sprinkle them with confectioner's sugar if desired, remove them and serve.
