Step 1
Iced Yerba Maté preparation:Add the Yerba Maté leaves to the sparkling water.Steep in the refrigerator for 12 hours.Strain the mixture.
Step 2
Mint sirup preparation:In a small pot bring the water and sugar to a boil over medium-high heat and stir until sugar is dissolved.Remove the pot from the heat and add 2/3 of the fresh mint leaves.Let steep and cool for 15-20 minutes.Strain the mixture.The sirup can be kept many days in the fridge in an airtight container.
Step 3
Mocktail preparation:In your pitcher, add 100ml of the mint syrup to the Iced Yerba Maté. Stir lightly before serving on ice. Decorate with a lemon slice and fresh mint leaves.Enjoy!The mix gives 4 servings and can be kept in the fridge for up to 5 days.
