Step 1
Place garlic, ginger and lemon zest into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Add all remaining ingredients, except chorizo, and cook 35 min/100°C/speed 1, placing Varoma dish without Varoma lid instead of measuring cup onto mixing bowl lid. Scrape down sides of mixing bowl with spatula.
Step 3
Cook for a further 10 min/Varoma/speed 2, placing Varoma dish without Varoma lid instead of measuring cup onto mixing bowl lid. Transfer jam into a hot-rinsed storage jar with a sealable lid and set aside to cool slightly.
Step 4
Place a medium-sized non-stick frying pan over high heat and add chorizo to pan. Fry for 2-3 minutes turning over occasionally until sizzling and crispy on both sides.
Step 5
Serve chorizo warm with spiced pear jam on the side.
