Step 1
Whisk together 4 eggs, 2⁄3 cup milk, 1/2 cup mashed pumpkin, 2 tablespoons caster sugar, 1 teaspoon vanilla extract and 1/2 teaspoon mixed spice in a large shallow dish.
Step 2
Melt 15g butter in a large frying pan over medium heat. Dip 4 thick slices of brioche into the egg mixture. Turn to coat both sides.
Step 3
Add to the pan and cook for 2 minutes each side or until golden brown. Repeat with butter, 4 brioche slices and remaining egg mixture.
Step 4
Serve with vanilla yoghurt, drizzled with maple syrup and sprinkled with pepitas and dried cranberries.
