Step 1
Prepare the Corn Ribs seasoning by combining all of the spices and oil into a large bowl and mix well. Toss the corn into the seasoning and coat them well.
Step 2
Lay the corn ribs in a single layer in the air fryer basket. Leave a little bit of space between each corn rib so air can flow throughout the air fryer.
Step 3
Cook the corn in an air fryer at 190C for 15 minutes. If you prefer crispier corn ribs, cook them for a further 3 minutes at the same temperature.
Step 4
While the corns are cooking, place all of your Coriander Cream ingredients into a food processor or blender, and blitz until smooth. Using a spoon, spread the Coriander Cream onto a plate. Set aside.
Step 5
When the corn ribs are ready, remove them from the air fryer using tongs and stack them on top of the Coriander Cream. Garnish with coriander, sea salt and cracked pepper. Serve with wedges of fresh lime.
