Classic Asian flavors come together to create a quick and easy chicken dish with spicy soba noodles that you can have on the dinner table in no time.

Spicy Soba Noodles with Chicken in Peanut Sauce

carrot, peeled

fat-free, less-sodium chicken broth, divided

peanut butter

ginger

soy sauce

honey

red pepper

garlic clove,

chicken breast

green onions

peanuts

Shave carrot lengthwise into thin strips using a vegetable peeler.


Combine 1/3 cup broth, peanut butter, ginger, soy sauce, honey, pepper, and garlic; stir with a whisk until smooth.


Place chicken in a large saucepan; add 1 2/3 cups broth. Bring to a boil. Reduce heat, and simmer 4 minutes or until chicken is done. Remove from heat; let stand 20 minutes. Drain; cut chicken into 2-inch pieces. Combine carrot, peanut sauce, chicken, and noodles in a large bowl; toss to coat. Sprinkle with onions and peanuts.


I really liked this dish.  I made it exactly as directed and it was good but bland.  So I added salt and pepper and it really came alive.  I think next time I'll add some broccoli and red peppers to alter the balance and make it a less noodley

Yes it's a spice.  You might have seen it on the table in pizza restaurants in a shaker.  Dry red flakes with the seeds mixed in.

Didn't change anything about this recipe at all. Followed it to a T....and it tastes awesome... not too salty...not too sweet...and good amount of spice...I got hiccups, so its definitely spicy.. I don't understand why some reviews say it's either too sweet or not spicy enough.. they must have done something wrong.. crushed red pepper is very spicy...so I loved it!.. Kinda reminded me of some thai noodles I had in the past... 

I made this dish tonight and used almond butter instead of peanut and used coconut sugar, 1 tbsp, instead of honey.  It was wonderful.  Will definitely make it again. 

I made several changes to the recipe, following other reviewers' comments. I bought a stirfry veggie mix and steamed the vegetables to mix in. I cooked the soba noodles (yum!) in the chicken stock left from the chicken. And I added a bit more red pepper and only half the honey. It came out delicious, if I do say so myself! The amount of the sauce may be a tiny bit too small, but that is because I added a lot of veggies and I like a lot of sauce. I will definitely be making this again the next time I'm craving peanut sauce.

I REALLY liked this recipe as a starting off point! My only dislike was that for my personal preference the sauce was too sweet as written in the recipe (and not from my peanut butter since I used the fresh ground peanut butter from the market with no sugar) so I added a bit more soy sauce &amp; then a bit more peanut butter to create the proper thickness again. Other than that it was awesome. I prefer more vegetables in my meals and I wanted t make this a one dish so I added julienne cucumbers &amp; red bell peppers with the carrots as well as a generous amount of cilantro to the green onion &amp; peanut garnish.

Made this without chicken and added lots of veggies - broccoli, red bell peppers, onions, snow peas, edamame.

Tasty dish!  Loved the peanutty flavored to the sauce, accentuated by the crunch of the peanuts on top.  The sauce was a little too sticky/dry, but still great, so I'd just a bit more broth.  Served with broccoli, which I think I'll just stir into the noodles next time.

Delicious.  Only thing I changed was used some other Asian noodle because my grocery store did not have soba noodles.  I also added broccoli after the chicken had boiled for a while. I didn't think it was spicy so I had to add more crushed red pepper and hot sauce. We loved it.

This was easy and very tasty. I used regular, natural (not reduced-fat) PB and to make it healthier, used 2 carrots, added 1/2 c. peeled, sliced cucumber and 2 c. shredded romaine. I also used less soba, about 6 oz. I will definitely make this again. My husband commented that it didn't taste like buckwheat (a good thing, in his opinion).

I didn't have crushed red pepper (what exactly is that- a spice??) so I used diced red bell pepper - probably didn't add the heat but it worked for me. I also added 1'2 can sliced water chestnuts left over from another recipe. The rest of the recipe I followed -- this is the BOMB!! I couldn't stop eating it. (Hint: I removed the chicken from the broth and cooked the noodles in that instead of water.) Be sure to use the green onion and peanuts - just that sprinkle on top really makes this an outstanding dish. I used a box of soba noodles my friend brought me from an asian market in Ohio. I can't find them in Indianapolis - can anyone suggest a good noodle to use instead because I want to make this again. :)

This was so good, although I wanted it to be slightly spicier.  Also, I would double the amount of chicken and maybe add more veggies to it next time, but it is good the way it is too!

The peanut sauce is a bit too sweet for me (reduced-fat Jif is a bit sweeter than regular) so next time I might not add in as much honey (if at all).  Also, will likely add a bit more soy and red pepper flakes.  Like other reviewers, I added red bell pepper and broccoli - I reduced the broth after pulling out the chicken and threw them in for a few minutes - but did not increase sauce to accomodate b/c there was plenty.  Has a very nice look to the dish.  Would consider adding to baby take-out boxes from the Container Store w/take-out chopsticks for next pot luck.

This is the recipe spicy peanut sauce recipe for which I have been looking for many years.  Yum!  I'll definitely make this again.  My only change was to omit the garlic.

Soooo easy and soooo impressive!  My first time making peanut sauce and it is delish!  I like the fresh veges added at the end for crunchy texture.  I did leave out the ginger as I don't regularly stock it and it was just as good.

Not like this recipe needs another review, but it is so good that I just had to add my own praise! It is tasty and quick, and is easily altered to your own tastes (i.e., we added extra spice to it, used chunky natural peanut butter, and left out the ginger). My only tip is that we needed to DOUBLE the amount of chicken (and then the sauce too) in order for it to turn into a meal for 4 even--but we're big protein eaters. We honestly may even eat this without the noodles for a low-carb option, it is THAT good. Enjoy!

Delicious!  I wanted to up the veggie component so added cooked broccoli and red and yellow peppers.  Served hot, but leftovers were just as tasty cold the next day.

excellent! i modified the recipe-of course- to accommodate what i had on hand. used chunky peanut butter instead of adding peanuts. needed to use up some fresh veggies, so i added steamed broccoli and raw cabbage. also substituted linguine noodles. i loved it and my picky boyfriend loved it!

My family loved this recipe.  I usually don't like to change recipes the first time I try them.  But, we had chicken last night, so I used Shrimp instead and also added steamed snow peas for additional veggies.  The shrimp was great.  One thing this recipe doesn't mention and it should have is that you are supposted to rinse soba noodles after cooking.  I think that may have been why some of the review for this recipe say their sauce was too thick.  I will make this again and again, loved it!

This is delicious....great peanut sauce with less fat &amp; sodium than others I've tried. The only recommendation I would make is to mix the sauce ingredients in the large bowl you will eventually combine everything in. I did not read ahead and dirtied a saucepan for poaching the chicken, one to boil the soba, a colander for draining the noodles, a small bowl for sauce and the big bowl for mixing. So very yummy but dirtied many dishes doing it the way I did!

Awesome, I've made this more than any other cooking light recipe. I have used other pastas and left off the green onions, and this always turns out fantastic.
